Viking Wheat Malt 1kg is used as a base malt for wheat beer styles. It can also be added to the mash when producing other top-fermented beer styles to impart a characteristic flavor and aroma. Wheat malt is sometimes used in bottom-fermented beers to enrich the flavor and improve foam stability. Wheat has a long history as a brewing raw material due to its similar climatic requirements to barley. Wheat beer is most commonly associated with southern Germany (Bavaria), where it is almost as popular as pilsner, though well-known wheat beer styles are also brewed in Belgium. Wheat beer is known for its refreshing taste and effervescence, making it particularly popular in spring and summer. Today, wheat beer is brewed in virtually every part of the world. Wheat beer is a top-fermented beer with a relatively high carbon dioxide content (up to 10 g/l). The aroma is typically fruity and phenolic, while the taste is light and slightly bitter. Some wheat beer styles undergo secondary fermentation in the bottle. Wheat beer is characterized by its haziness (due to yeast) and effervescence (due to the high concentration of CO2). It is generally a pale beer, although many dark versions also exist. Wheat malt is characterized by a lower level of amylolytic activity due to its naturally lower α-amylase content. This should be taken into account during the mashing stage.
